Blog EntryChicken Tuesday...the easiest Green SpaghettiNov 13, '07 8:46 PM
for everyone

I knew I'd be very busy this week, so I planned one of Chris's favorites.  We call it Green Spaghetti, but it's really quite a pale shade.  Easy, easy recipe: First  saute small pieces of chicken in olive oil.  Then  add one or two containers of commercially-made pesto sauce (with basil) that I find in the refrigerated section at Publix.  Mix the chicken and the pesto.  Meanwhile, boil some angel hair pasta.  When tender, drain the spaghetti, then add it to the skillet with chicken and pesto sauce, mix well and serve.  Chris likes his with lots of parmesan on top, a salad and garlic toast.  CB does too!  Oh, if you have too little sauce to coat the pasta nicely, just add more olive oil.  You can always add fresh basil if you have some in the garden.

I make this too but I add pesto to alfredo sauce and throw in some broccoli and tomatoes.
